2 1/2 cups milk
1 3/4 cups fresh bread crumbs
1 1/2 cups grated sharp Cheddar cheese
1 1/2 tsp. Dijon mustard
4 eggs, separated
salt & pepper
Recipe
Bring milk to a boil, then stir in bread crumbs & remove from the heat. Beat in the cheese, mustard & egg yolks.
Season the bread crumb mixture & set aside for 30 minutes.
Meanwhile, preheat the oven to 350 degrees & butter a shallow 6 1/4 cup baking dish.
Whisk the egg whites in a large bowl until stiff but not dry. Carefully fold the egg whites into the bread crumb mixture 1/3 at a time. Use a large spoon or spatula.
Transfer the mixture to the baking dish & bake for about 30 to 40 minutes, depending on the depth of the dish, until just lightly set & golden.
