1 (8 oz.) Cool Whip, do not thaw
2 cups boiling water
1 pkg. (8 serving size) or 2 pkgs. (4 serving size) Lime Jell-O gelatin
2 cups cold water
Green tinted coconut
Recipe
Scoop 8 balls from Cool Whip with large ice cream scoop, using all of whipped topping; place 1 scoop in each of 8 dessert dishes. Place dishes in freezer until ready to use.
Stir boiling water into gelatin in medium bowl or until completely dissolved. Stir in cold water. Refrigerate 1 hour or until slightly thickened (consistency of unbeaten egg whites)
Spoon gelatin around whipped topping in dishes. Refrigerate 3 hours or until firm.
Sprinkle gelatin with tinted coconut just before serving (resembles grass). To tint coconut, place in a plastic bag. Dilute a few drops of food coloring with 1/2 tsp. water & add to coconut. Close bag & shake until coconut is evenly tinted.
