    1 cup(s) sugar
    5 tbsp cornstarch
    1 tsp salt
    2 2/3 cup(s) milk
    2 eggs, beaten
    1/2 cup(s) lemon or orange juice
    1 tsp grated lemon or orange peel
    2 tbsp butter or margarine
    1/2 tsp vanilla
    2 1/2 cup(s) shredded coconut
    1 1/2 cup(s) fine cracker crumbs
    1 cup(s) sugar
    1 cup(s) sifted flour
    1 cup(s) soft butter or margarine

    Combine sugar, cornstarch, and salt. Stir in milk. Cook until thick, stirring constantly. Mix egg and lemon juice; stir in a little of hot mixture; return to pan. Cook and stir over low heat 2 minutes. Add lemon peel, butter and vanilla. Pour into coconut crust.

    COCONUT CRUST:
    Mix coconut, cracker crumbs and sugar, flour and butter. Place half in botton of a 13x9x2 pan. Pour in filling, top with remaining coconut mixture. Bake in 400 degree oven 25 minutes or till top is golden. Chill. cut into squares.

    Serves 18.
