    3/4 cup(s) flour
    1 tsp baking powder
    1/2 tsp cinnamon
    1/4 tsp nutmeg
    1/8 tsp cream of tartar
    2/3 cup(s) Maple Syrup
    1/3 cup(s) sugar
    1 tsp vanilla
    3 large eggs, separated, at room temperature
    1 large 8 oz container frozen whipped topping, like Cool Whip

    Preheat oven to 350 F. 15 1/2 x 10 1/2 jelly roll pan lined with waxed paper.
    Stir together the first five ingredients; set aside.
    In large bowl, beat egg whites until soft peaks form; add cream of tartar & continue to beat until stiff peaks form; set aside.
    In small bowl with same beaters at high speed, beat egg yolks, syrup, sugar & vanilla until thick & foamy; about 3 minutes. Sprinkle flour mixture over beaten egg whites. Add yolks.
    Gently fold mixture until thoroughly blended. Spread evenly in pan. Bake 15 minutes.
    Invert cake on towel, remove wax paper, roll with towel and cool.
    Mix about 1/4 cup maple syrup in the bowl of cool whip. Unroll cake, spread the cool whip on the cake and reroll. Place in refrigerator of freezer. Slice and enjoy.

    Serves 8.
