Papaya Freeze

1 cup orange juice
1/4 cup sugar
1 ripe medium papaya, chopped
1/2 cup light cream
2 Tbsp. lime juice
2 egg whites
1/4 cup sugar
Recipe
In a saucepan, combine orange juice and 1/4 cup sugar. bring to boiling, stirring occasionally to dissolve sugar. Reduce heat and simmer for 5 minutes. Cool.
In a blender or food processor, combine the chopped papaya and cream. Cover and blend about one minute, or until smooth. Stir in lime juice and orange juice mixture. Transfer to a 9x9x2 inch baking pan. Cover and freeze about 2 hours or till most firm.
In a small mixer bowl, beat egg whites with an electric mixer on medium speed till soft peaks form. Gradually add 1/4 cup sugar, beating till stiff peaks form.
Break the frozen mixture into chunks, and transfer to a large CHILLED mixing bowl. Beat with electric mixer till smooth but not melted. Fold in egg whites, return to baking pan, cover and freeze till firm.
Let mixture stand at room temperature about 5 minutes before serving.
For neat serving "bowls", cut 6 or 8 flour tortillas into sun shapes with scissors. In a large heavy skillet, heat 3 inches of cooking oil to 360°. Cook tortillas one at a time, using a ladle to push down the center to form cups, about 30-45 seconds each. Drain on paper towels. Sprinkle cups with a cinnamon/sugar mixture while still warm.
