Peaches in Sauternes

For an added treat, serve small scoops of vanilla ice cream on the side.
1 750-ml. bottle Sauternes dessert wine, such as Pellegrino's Passito di Pantelleria
1 cup sugar
1 cup water
8 ripe peaches, peeled
Recipe
In a medium saucepan combine wine, sugar, and water; heat until bubbles form. Simmer gently, uncovered, for 35 to 45 minutes until syrup-like and reduced to about 1½ cups. Place peaches in a large bowl. Remove syrup from heat and pour over peaches. Let peaches sit in syrup for 1 to 4 hours, turning occasionally. Serve peaches drizzled with syrup. Makes 8 servings.
