Peanutty Ice Cream Sandwiches

1 (20-oz.) pkg. Pillsbury Refrigerated Peanut Butter Cookies
2 2/3 cups Vanilla or Chocolate ice cream, slightly softened
8 maraschino cherries or miniature marshmallows
3/4 cup chopped peanuts Recipe
Prepare and bake 16 cookies as directed on package; cool. (Remaining cookie dough can be wrapped and refrigerated for a later use.)
To make each ice cream sandwich, place 1/3 cup ice cream on bottom side of 1 cookie. Place cherry in center of ice cream. Top with second cookie, bottom side down. Gently roll ice cream edge of sandwich in chopped peanuts.
Place on cookie sheet. Freeze 3 hours or until firm.
Wrap sandwiches individually in foil; store in freezer.
Let stand at room temperature 5 to 10 minutes before serving.
