    Phyllo Cheesecake with Chocolate Sauce

    CHEESECAKE
    4oz light cream cheese
    6oz 5% ricotta cheese
    3/4 cup sugar
    1 egg
    1 tsp. vanilla
    1/2 cup raisins (option)
    5 sheets phyllo pastry
    2 tsp. butter/margarine, melted

    CHOCOLATE SAUCE
    1/3 cup sugar
    1/4 cup milk
    2 tbsp cocoa


    Preheat over to 375; Spray baking sheet with vegetable spray

    1) In a food processor, combine cream cheese, ricotta cheese, sugar, egg and vanilla; process until smooth. Stir in raisins.

    2) Lay two phyllo sheets one on top of the other; brush with melted margarine. Layer another two phyllo sheets on top and brush with melted margarine. Lay last sheet on top. Put cheese filling over top of phyllo; fold sides in and roll. Put on prepared baking sheet, brush with remaining margarine and bake for 25-30 minutes or until golden.

    3) Combine sugar, milk and cocoa in saucepan; cook over medium heat, stirring for 5 minutes or until smooth. Serve cheesecake with chocolate sauce.
