    Pineapple Upside Down Cake Pudding

    1/2 cup packed brown sugar
    1/4 cup water
    1 16-oz. can pineapple chunks, drained and juice reserved
    1 cup fat-free vanilla yogurt
    3 cups cooked oat groats

    Recipe



    In a small saucepan, bring the brown sugar and water to a boil and cook over medium heat for 5 minutes or until the sugar is golden brown but not burned. Slowly stir in 1/2 cup of pineapple and cook, stirring, until smooth. Stir the yogurt into the oat groats and divide it into 6 dessert dishes. Spoon pineapple mixture over oat mixture, refrigerate until chilled, if desired.

    Makes 6 servings.
