Rhubarb Meringue Dessert

2 sticks butter, softened
2-1/4 cups flour, divided
2-1/4 cups sugar, divided
6 eggs separated
1/4 tsp salt
5 cups chopped rhubarb (about 1/4inch pieces)
2 tsp vanilla
Recipe
1. Cream softened butter with a large spoon until smooth. Combine 2 cups of the flour and 2 Tbsp of the sugar. Slowly blend flour mixture into softened butter, creaming until well mixed and smooth.
2. Pat dough out into a 9 by 13 inch pan, making it as smooth and even as possible. Bake in a preheated 350-degree oven for 10 minutes.
3. Beat egg yolks with wire whip. Combine 2 cups of the sugar, remaining 4 Tbsp of flour and salt. Add slowly to egg yolks combining thoroughly with wire whip. Stir in rhubarb.
4. Pour this mixture over baked crust, spreading evenly. Return to 350-degree oven and bake for 45 minutes.
5. Beat egg whites until soft peaks form. Slowly add remaining 2 Tbsp of sugar and beat until stiff, add vanilla.
6. Spread meringue over the top of dessert, swirling attractively and covering top completely. Return to oven and bake 10 minutes more, or until beautifully golden brown.
