List of Ingredients
4 oz. unsweetened chocolate, chopped
6 T unsalted butter, cut into pieces
1/2 cup sifted all purpose flour
1/8 tsp baking powder
1/4 tsp salt
1/2 tsp instant coffeee
2 tsp water
2 large eggs, room temperature
1-1/2 cups sugar
1/2 cup pecans, chopped and toasted
1/2 cup chocolate chips (good quality)
Topping:
4-1/2 oz. semi-sweet chocolate (good quality)
8 oz. cream cheese, room temperature
1/4 cup sugar
1 large egg, room temperature
Instructions:
1. Position rack in center of the oven and preheat to 325. Butter sides of 9-inch square baking pan with 2-inch high sides. Fold 18 x 12 piece of foil in half crosswise. Line pan with foil, allowing to extend over 2 sides. Butter foil. Dust with flour.
2. Melt unsweetened chocolate and butter, stirring until smooth. Cool.
3. Sift flour, baking powder and salt into small bowl. Place coffee powder in large bowl, add water and dissolve. Add eggs and sugar. Using electric mixer, beat until pale yellow. Fold in cooled chocolate, then dry ingredients. Mix in pecans. Spread in prepared pan. Bake for about 25 minutes (should be slightly undercooked). Transfer to rack. Press down gently. Maintain oven temperature.
4. Melt semi-sweet chocolate. Blend cream cheese, sugar and egg in processor until smooth.
5. Add warm melted chocolate and blend. Pour topping over hot brownie. Bake until topping moves just slightly in center, about 8-10 minutes. Cool on rack. Chill overnight.
*My recipe is currently one of the most popular desserts at Cafe Matsunosuke in Kyoto, Japan where I teach American heirloom desserts classes several times each year. I know you'll love it too! Just be sure to use very high quality chocolate.
