White Chocolate Éclair

1 package cinnamon graham crackers
2 boxes white chocolate pudding
8 oz tub Cool Whip
1 tub ready-made chocolate frosting

Mix pudding according to package directions for "pie filling". Fold in Cool Whip.
Break graham crackers into squares. Line bottom of a 9 x 13-inch pan with graham crackers (usually three squares by five). Over the graham crackers, smooth on 1/3 of the pudding/Cool Whip mixture. Repeat graham cracker layer, then pudding until you have four layers of graham crackers and three layers of pudding. You will end with a layer of crackers.
Heat frosting in microwave for about a minute, until somewhat runny. Pour frosting over last layer of crackers.
That's it, just refrigerate until you are ready to serve (overnight or longer is best because the graham crackers soften and are more like cake or pastry).
For extra flair, you can top with a flourish of whipped cream and a drizzle of chocolate syrup when you serve it. (That does make it VERY rich, so be warned!!!)
