3 1/2 pounds of chicken breast, skinned
2 tablespoons of olive oil
1 clove garlic
1 teaspoon of oregano
Dash salt
Dash pepper
1 1/2 cup of sliced mushrooms
One 16 ounce can of stewed tomatoes
parsley as desired
Brown chicken in oil with garlic. Before turning sprinkle with oregano, salt and pepper. Remove garlic.
Add mushrooms, brown lightly. Add tomatoes. Cover and simmer 30 minutes, uncover. Continue cooking until sauce is reduced to consistency desired and chicken is very tender. Garnish with parsley. Calories 1 serving = 352.
