1/4 cup low-calorie margarine, melted
1/4 cup chopped pecans
1 teaspoon cinnamon
1 cup all-purpose flour
8 ounces light cream cheese
2 packets of Equal
1-1/2 cups whipped cream (Use a little Equal to sweeten)
2 tsp. instant coffee
1 small package artificially sweetened, low-fat, instant vanilla pudding
1 small package artificially sweetened, low-fat, instant chocolate pudding
3 cups evaporated skim milk
Recipe
Preheat oven to 375 degrees. Mix together the margarine, nuts, half the cinnamon and the flour. Press into a glass pie pan and bake until lightly brown. Remove from oven and let cool. Crumble the crust when cool and divide into small custard cups.
Blend together the cream cheese, sugar and one cup whipped cream. Add the instant coffee and remaining cinnamon; beat well. Pour over the crust in the custard dishes. Mix together the puddings and evaporated milk until thick.
Spread on top of the cream cheese mixture. Place a dollop of whipped cream on each dessert. Garnish with fresh mint. Serves six. Enjoy!
