Classic Carrot Cake - No Added Sugar

1 C white flour
3/4 C wholemeal flour
2 tsp baking soda
2 tsp cinnamon
2 tsp nutmeg
1 tsp allspice
1/4 tsp salt
1 C golden raisins ( sultanas)
3/4 c frozen apple juice concentrate
3/4 c oil
3 eggs
2 tsp vanilla essence
2 c finely grated raw carrot ( packed firmly into cup)
1 x 8-10oz can unsweetened crushed pineapple, well drained
1/2 c raisins, chopped
1/2 c chopped walnuts
Cream Cheese Topping
10oz low fat cream cheese at room temp
2 tsp grated lemon rind
2 Tbsp frozen apple juice concentrate
1/2 tsp vanilla
Recipe
Preheat oven to 180C (350F)
Grease 2 x 8" round cake tins or 1 x 13x9" cake tin
Sift together flours, soda, cinnamon, nutmeg, salt and allspice
In a small saucepan combine the golden raisins and apple juice
Simmer until the liquid is absorbed
Puree in food processor
Blend in oil, egg and vanilla until just combined
Transfer to a bowl and add remaining ingredients
Add dry ingredients to carrot mixture 1/3 at a time,
stirring just enough liquid to blend
Pour into prepared pans
Bake 40-45 minutes
Cool in tin on wire rack
Remove from tins when cool and ice - if you used 2 small tins, ice out of tin,
if you used the large one Ice in tin
(don't ask me why that's the instructions that came, lol)
Mix the topping together and beat til fluffy, refrigerate until ready to use to ice cake
