Low Calorie Applesauce Cake

2 cups of raisins
2 cups of water
1 cup of unsweetened applesauce
2 eggs
3/4 cup of oil
2 tablespoons of artificial sweetener
2 cups of flour
1 teaspoon of baking soda
1 1/4 teaspoon of cinnamon
1/2 teaspoon of nutmeg
Cook raisins in water until soft. Add applesauce, eggs, oil, and sweetener to raisins. Mix well. Add remaining ingredients. Mix well. Pour into 9 x 13 inch glass pan, greased with diet margarine. Bake at 325ºF. for 45 minutes. 216 calories per serving. Serves 16.
