Sugar-Free Rice Pudding

3 cups milk, divided use
1 cup Minute Rice, uncooked
1/3 cup raisins
1/2 tsp cinnamon
1/4 tsp nutmeg
1 (1-oz) box Jell-O sugar-free, fat-free vanilla instant pudding mix
Recipe
Bring one cup of the milk to a boil. Remove from heat. Immediately add rice, raisins, cinnamon and nutmeg. Mix, cover and set aside for 5 minutes.
Prepare pudding according to package directions using the remaining 2 cups of milk. Combine pudding with rice mixture.
Cover with plastic wrap. Refrigerate before serving.
