Apple-Cherry Crisp

2 pounds tart red apples, cored and sliced into 1/4-inch thick wedges (about 6 cups)
1/4 cup dried cherries
2 tablespoons lemon juice
1 teaspoon orange zest
1/4 cup all purpose flour
1/4 cup brown sugar
1/2 cup water
Topping:
1 1/2 cups rolled oats
1/2 cup brown sugar
1 teaspoon cinnamon
1/2 cup pecans, coarsely chopped
6 tablespoons butter, melted
Recipe
Place the sliced apples and dried cherries in a large mixing bowl. Stir in the lemon juice and orange zest. In a small bowl, combine the flour and brown sugar; then stir into the apple mixture. Lightly butter an 13x9-inch baking dish. Spread the apple mixture evenly in the baking dish and pour the water over the top.
Topping: In a mixing bowl, combine the oats, brown sugar, cinnamon and pecans. Stir in the melted butter. Spoon the topping evenly over the apple mixture.
Bake in a 350 degree oven for 40 to 45 minutes, until the mixture is bubbly and the apples are tender. Serves 8.
Tip: To ensure a "crisp" dessert, bake no earlier than 2 hours before serving. If baked ahead of time, re-heat in a 350 degree oven for 5 to 8 minutes just before serving.
