    2 1/4 cups Rice, cooked
    3 dessertspoon Peach jam
    2 cups Milk, lukewarm
    3 level tablespoons Cornflour
    1 level teaspoon Butter
    2 Egg yolks
    1/2 cup Sugar
    1/2 teaspoon Vanilla
    2 tablespoons Water

    Recipe



    Heat sugar and water in saucepan slowlyuntil golden brown.

    Very slowly add warm milk and stir until butterscotch dissolves.

    Mix cornflour with a little extra milk and add to mixture.

    Cook for 3 minutes and stirring until thickened.

    Add butter, beaten egg yokes, vanilla and rice.

    Then pour into a oven proof dish.

    Top lightly with the peach jam.

    Top with meringue, sprinkle a little sugar on top ofmeringue.

    Set and lightly brown in a moderate oven.

    Serves 4 to 6
