Cajun Fig Cobbler

1/2 cup of butter or margarine
1 cup of all purpose flour
1 cup of sugar
2 teaspoons of baking powder
1 cup of milk
1 large egg
1 teaspoon of vanilla extract
Two 11 ounce jars of fig preserves
Place the butter in a 2 quart baking dish. Bake at 375�F. until the butter melts. Remove from the oven and set aside. Combine the flour, sugar, and baking powder in a large bowl. Add the milk, egg, and vanilla, stirring until smooth. Pour the battered into the baking dish, spoon preserves over batter. Bake at 375�F. for 40 minutes, covering the dish with aluminum foil after 20 minutes. Serve warm with vanilla ice cream or whipped cream.
