    1 pound fresh or frozen* tart red cherries, pitted
    1/2 cup water
    1 tablespoon lemon juice
    1 1/4 cups sugar
    1/2 cup whipping cream

    Recipe



    Place the pitted cherries, water, lemon juice and sugar in a food processor or blender and blend until smooth. Pour the cherry mixture into a bowl. Stir in the cream, cover and refrigerate overnight, or until very cold, below 40 degrees.

    Freeze the sorbet in an ice cream freezer according to manufacturer's directions. Makes 1 quart.

    * Thaw frozen cherries in the refrigerator before using.
