    Chocolate Almond Ladyfingers

    2 envelope unflavored gelatin
    1-1/4 cups sugar
    3/4 cups cocoa
    4 egg, separated
    2-1/4 cups milk
    1/3 cup almond or rum liqueur
    2 pkg. ladyfingers, spilt
    1-1/2 cups heavy cream

    Almond Cream:

    1/2 cup whipping cream
    1 Tbsp. confectioner's sugar
    1 Tbsp. almond or rum liqueur

    In medium saucepan, mix gelatin with 1 cup sugar and cocoa. Blend in egg yolks beaten with milk. Let stand 1 minute, stir over low heat, until gelatin dissolved, with wire whip. Beat mixture until chocolate is blended, stir in liqueur.

    Pour into large bowl and chill, stirring a few times, until mixture mounds slightly when dropped from a spoon.

    Meanwhile line bottom and sides of a 9-inch spring-form pan, with ladyfingers, chill.

    In large bowl, beat egg whites, until soft peaks form, gradually add remaining sugar, beat until stiff. Fold into the chocolate mixture. Chill until firm.

    Garnish with almond cream

    ALMOND CREAM:


    In a medium bowl, beat the heavy cream, with confectioner's sugar, until stiff. Fold in the almond or rum liqueur.
