Chocolate Waffle Dessert

2 Ounces semi-sweet chocolate
2-1/2 Tbsp unsalted butter
1 Extra-Large egg, separated
1 Tbsp granulated sugar
1 Tsp malted milk powder (chocolate or plain)
1/2 Tsp baking soda
1 Cup milk
3/4 Cup + 2 Tbsp All-purpose flour
Confectioners' sugar
Vanilla ice cream
Chocolate Velvet Sauce
4 Ounces semi-sweet chocolate, chopped
2-1/2 Tbsp unsalted butter, cut into bits
2 Tbsp milk
2 Tbsp heavy or whipping cream
1 Tbsp dark rum
Recipe
Melt chocolate and butter in the top of a double boiler until smooth; remove from heat.
In a large bowl, beat the egg yolk with the granulated sugar until light. Wisk in the malted milk powder, baking soda and chocolate mixture. Slowly whisk in the milk and flour; beat until smooth.
Beat the egg white until stiff; fold into the waffle batter.
Heat a lightly greased waffle iron. Pour about 1/2-Cup batter into the iron (amount depends on the iron) and bake until the waffle is crisp. Transfer cooked waffles to a wire-rack-lined baking sheet while baking the remaining waffles. You should get 6-large waffles.
Just before serving, preheat oven to 350ºF. Place waffles on the wire-rack-line baking sheet and bake in oven for 2-minutes. Turn waffles over and continue to bake until very crisp, about 3-minutes longer. Do not allow waffles to burn. Sprinkle the waffles with confectioner's sugar and serve immediately with a scoop of vanilla ice cream and Chocolate Velvet Sauce.
Chocolate Velvet Sauce:
In top of double boiler, melt chocolate. Stir in the butter, bit by bit, until smooth. Stir in the milk, cream and rum; continue stirring until smooth
