Chunky Cherry-Cobbler Ice Cream

Cobbler Topping:
In mixing bowl stir together:
1 cup oatmeal 1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/2 tsp ground cinnamon
Stir in:
1/3 cup melted margarine
Spread in shallow baking pan and bake in 350 degree oven for 20 minutes
Cool
This makes a nice granola topping. I always make this ahead of time and keep in a airtight container
Ice Cream:
6 slightly beaten fresh eggs
2 cups of sugar
1 quart light cream (I use half and half)
1 4-serving size pkg instant vanilla pudding mix
Dash salt
1 21-ounce can cherry-pie filling
2 cups whole milk
In a mixer bowl beat together the eggs and sugar
Add cream, pudding mix, vanilla, and salt; Beat well.
Mix in the cherry pie filling
Pour into a 4-5 quart ice cream freezer
Add milk
Freeze according to manufacturer's directions
Remove dasher
Add the Cobbler Topping and stir till well mixed
Ripen ice cream if you can wait that long!
