    1 quart vanilla ice cream
    1 C flaked coconut
    1 C canned cream of coconut

    Recipe



    Let ice cream soften slightly in refrigerator. Blend the three ingredients in blender until well-blended but NOT melted.
    Turn into ice-cube tray or a 1 quart mold**; freeze several hours wrapped in freezer wrap. (8 servings)

    Note: **I use a mold. If using mold, line first with large piece of foil leaving an overhang; pack in ice cream; freeze. To unmold firmly grasp foil and lift out ice cream; remove foil.
