Easy Chocolate Bavarian Cream

3/4 cup hot water
2 envelopes unflavored gelatin
6 ounces semisweet chocolate chips
3 tablespoons sugar
2 egg yolks
1 cup light cream
1/2 teaspoon vanilla extract
1 heaping cup crushed ice
1/2 cup whipping cream
Recipe
In a small saucepan, heat 3/4 cup water until hot. In an electric blender, combine the 2 envelopes gelatin and the hot water. Cover and blend on high speed for 45 seconds.
Add the 6 ounces chocolate chips and 2 tablespoons of the sugar. Cover and blend 15 seconds.
Turn speed to low, remove the cover, and add the 2 egg yolks, 1 cup light cream, 1/2 teaspoon vanilla, and 1 cup crushed ice. Cover and blend on medium speed until mixture begins to thicken.
Turn off the blender and carefully pour dessert into 4 to 6 parfait glasses or a 1-quart mold. The Bavarian will continue to thicken and be ready to serve in 5 minutes.
Refrigerate if not serving immediately.
Meanwhile, with an electric mixer, whip the 1/2 cup whipping cream with the remaining tablespoon sugar. Garnish each parfait glass with some of the whipped cream and serve. If using a mold, unmold the dessert onto a platter before garnishing and serving.
