    Golden Vanilla Ice Cream

    12 egg yolks, beaten
    2 ½ cups milk
    2 ½ cups whipping cream
    1 ½ cups sugar
    ¼ tsp. salt
    1 vanilla bean
    1 tsp. vanilla extract

    Recipe



    In a large saucepan combine egg yolks, milk, whipping cream, sugar, and salt. With a knife, halve the vanilla bean lengthwise. Scrape out seeds. Add seeds and pod to egg mixture. Cook and stir over medium heat until the mixture thickens and coats a metal spoon, about 8 to 10 minutes. Remove from heat. Pour mixture into a medium bowl. Remove and discard vanilla pod. Stir in vanilla extract. Cover and chill for 4 to 24 hours until completely chilled.
    Freeze mixture in a 4- to 5-quart ice-cream freezer according to manufacturer’s directions. Remove blade and stir ice cream. Cover and place container in freezer for 4 hours to ripen, if desired. Makes about 2 quarts.
