Honeyed Pear Ambrosia

Two 16 ounce cans of pear halves, juice pack
One 11 ounce can of mandarin orange sections, drained
1/4 cup of sliced maraschino cherries
2 tablespoons of honey
2 tablespoons of lime juice
2 tablespoons of shredded coconut, toasted
drain the pears and reserve the juice. In a compote drained pears, mandarin orange sections, and maraschino cherries. Combine the reserved pear juice, honey, and lime juice. Pour over fruit and stir carefully. Chill thoroughly, about 2 hours. Before serving, sprinkle toasted coconut over the top.
