2/3 cup sugar
1/4 cup all-purpose flour
1 tsp finely grated lemon peel
2 tbsp lemon juice
1 tbsp liquid margarine
3 egg yolks
1-8 oz carton plain low-fat yogurt
1/2 cup skim milk
3 egg whites
Recipe
In a mixing bowl, combine sugar, flour & a dash of salt. Stir in lemon peel, lemon juice & margarine.
In another mixing bowl, beat egg yolks thoroughly; beat in yogurt & milk. Add to lemon mixture.
Beat egg whites until stiff peaks form; fold in lemon mixture. Pour batter into ungreased 8" sq. baking pan.Place baking pan in a larger pan; place on oven rack & pour hot water into larger pan to a depth 1". Bake in 350F oven for 40 minutes or till set. Serve warm.
