1 envelope unflavored gelatin
1/2 cup fresh lemon juice
4 eggs, separated
1-1/2 cup sugar (superfine is best)
1/8 tsp salt
3 T. butter
1-1/2 t. grated lemon peel
1 t. vanilla
Lady Fingers (the Italian style, work best)
Whipped Cream Recipe
Soften gelatin in lemon juice; set aside
Beat egg yolks and 1 cup of the sugar together until thick.
Combine egg yolk mixture, gelatin and butter in top of double boiler, cook over hot, NOT BOILING, water.
Stir constantly with wooden spoon until thickened, (about 10 minutes)
Stir in lemon peel and vanilla
Cover with buttered waxed paper and cool to lukewarm. Important, do not let it get too cool or product will be lumpy. Or until it begins to thicken.
Beat egg whites until soft peeks form. GRADUALLY add remaining 1/2 cup of sugar and beat until stiff.
Fold into lemon mixture along 1 cup of whipped cream.
Place some of the mixture in bottom of 9" springform pan, enough to hold ladyfingers to the side of pan.
When ladyfingers are in place. spoon in gently the remainder of the lemon mixture
Refrigerate until firm.
Unmold and serve with additional whipped cream
