2 Tbsp Butter
7/8 cup sugar
3 eggs
1 cup milk
1-1/2 Tbsp flour
1/3 cup lemon juice
Grated rind of 1 lemon Recipe
Preheat oven to 350'
Beat the butter until soft, then gradually add the sugar, beating until it is all incorporated
Separate the eggs and beat in the egg yolk one at a time
Add the milk, flour, lemon juice, and rind, and beat to mix well; the mixture will have a curdled look
Beat the egg whites unti they form soft peaks, then fold into the batter
Turn into a 1-1/2 quart baking dish and set in a pan of hot water that comes halfway up the sides of the dish
Bake 50-60 minutes
Let cool and serve either tepid or chilled, with pitcher of heavy cream or whipped cream
