16 oz. cream cheese
2 cups self-rising flour
3 cups whipping cream
1 cup butter
6 oz. instant lemon gelatin
1 cup confectioners' sugar
1 cup chopped pecans
1-1/2 cups whipped cream
1 cup coconut Recipe
Preheat oven to 300º
In a large bowl, mix 8 oz. cream cheese, flour, and the butter. Mix well until a dough consistency is formed.
Spread into a 9" x 131/2" baking dish. Bake at 300 degrees for 15 minutes or until light brown. Remove from oven and cool.
In a chilled mixing bowl, whip the whipping cream and gelatin to a thick custard; set aside in refrigerator.
In a bowl, mix remaining cream cheese and the confectioners' sugar.
Spread this mixture over cooled dough. Then sprinkle the chopped nuts over the cream cheese mixture.
Remove the lemon custard from the refrigerator and layer over the nuts.
Spread the whipped cream over lemon custard and top with coconut flakes.
Return to the refrigerator and chill for 1 hour.
Yield: 8 to 10 servings
Note: What is instant lemon gelatin? I wondered that myself. I used lemon pudding mix. The recipe came from a restaurant. They sometime have things us civilians don't know about, so I just tried the pudding and it worked.
