    1 cup sugar
    1/2 cup water
    1/2 cup maple syrup
    1-1/2 cups sugar
    15 whole eggs
    15 egg yolks
    1/2 gallon milk
    1-1/2 cups sugar
    1 vanilla bean

    Recipe



    Combine 1 cup sugar and water and caramelize sugar. Add mixture to bottom of custard cups and place cups in a water bath.

    In a separate bowl, add 1-1/2 cups sugar to whole eggs and egg yolks. Mix well. Combine milk, 1-1/2 cups sugar, maple syrup and vanilla bean and warm almost to boiling point. Slowly whisk into egg mixture, being careful not to cook eggs. Pour mixture into cups. Bake in a water bath at 275 degrees until set, approximately 1 to 1-1/2 hours.
