    No-Bake Rice Pudding

    1/2 gallon whole milk
    1 c. uncooked rice (regular long grain, not Minute)
    3/4 cup sugar
    4 scoops vanilla ice cream
    1 Tbs. vanilla
    1 cup raisins (optional)

    Recipe



    Cook milk, rice and sugar on top of stove until thick. (over medium heat, takes about 30-40 minutes).
    Stir often to keep rice from sticking. (I spray the pot with Pam beforehand)
    When mixture thickens and rice is cooked, remove from heat.
    Add ice cream; stir until it melts.
    Add vanilla. Cool and chill

    Serves 6-8

    NOTES:
    After combining milk, rice and sugar I let it stand for a few minutes to let the rice 'soak'
    The original recipe didn't call for raisins, but I like raisins in rice pudding, so I add the raisins about halfway through the cooking.
    Mixture will thicken some more as it cools and is chilled
