Peach Crisp

5 cups sliced, peeled fresh peaches or frozen unsweetened peach slices
2-4 Tbsp. granulated sugar
¼ cup quick-cooking oats
¼ cup packed brown sugar
2 Tbsp. all-purpose flour
1/8 tsp. ground nutmeg, ginger, or cinnamon
2 Tbsp. butter
2 Tbsp. chopped nuts
Recipe
For filling, thaw fruit, if frozen. Do not drain. In a medium mixing bowl, combine peaches and granulated sugar. Divide the peach mixture among six 6-ounce custard cups.* Place custard cups in a 15x10x1-inch baking pan.
For topping, in a small mixing bowl combine the quick-cooking oats, brown sugar, flour, and nutmeg. With a pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in nuts. Sprinkle topping over filling.
Bake in a 375° oven for 30 to 35 minutes or until fruit is tender and topping is golden. Makes 6 servings.
*Note: If desired, place the peach mixture in an 2-quart square baking dish. Double the topping and sprinkle over the filling. Bake as above.
