    Peanut Butter Ice Cream Squares

    1 1/4 cup graham cracker crumbs
    1/4 cup sugar
    6 Tbsp butter, melted
    1 cup dry-roasted peanuts, chopped
    1/2 cup light corn syrup
    1/3 cup peanut butter
    1 quart vanilla ice cream

    Recipe



    In mixing bowl combine crumbs, sugar, and melted butter. Press onto bottom of a 9x9x2-inch baking pan. Place in freezer 30 minutes. Meanwhile, stir together 2/3 cup of the peanuts, the corn syrup, and peanut butter. Stir ice cream to soften. Spoon half of the softened ice cream evenly over chilled crust. Spread corn syrup mixture atop. Carefully spread remaining ice cream over all. Sprinkle with the remaining 1/3 cup chopped peanuts. Cover and freeze till firm. Let stand at room temperature for 10 minutes before serving. Makes 9 servings.
