Pineapple and Nut Salad

� 2 cups pineapple cubes
� 4 heaping tablespoons grated coconut
� 2 heaping tablespoons cashew nuts
� 1/2 cup tablespoons light cream
� 2 tablespoons honey
� 1/3 cup white rum or banana liqueur
Recipe
In a bowl, combine the pineapple, coconut and cashews. Add cream, honey and rum. Mix well and let stand one hour at room temperature. Refrigerate and serve cool.
Yield: 4 servings
