    Filling:
    2 Very ripe sapadillas
    1/3 Cup Sugar
    1 Cup Almond flour
    1 1/2 Cups Ricotta Cheese
    1 Egg yolk
    Pinch Salt

    Peel and seed sapadillas, then puree them with the sugar. Fold in the remaining ingredients.

    Additional Ingredients:
    2 Egg yolks
    1 Egg
    1/4 Cup Milk
    2 Sheets Puff pastry

    Combine the yolks, egg and milk in a small bowl and whisk together. Cut each puff pastry sheet in two, leaving one piece slightly larger than the other. Place the small pieces on a prepared sheet pan and brush the edges with the egg-milk mixture. Spread the sapadilla mixture in the middle of each, and then top with the larger pieces of puff pastry. Poke several small holes in the top of each to vent steam, and brush with the egg wash. Bake at 375 degrees for about 15 minutes, or until the pastry is well risen and golden brown.
