Strawberry Mousse

1 pound fresh strawberries, rinsed and stemmed
1/3 cup sugar
2 teaspoons unflavored gelatin
1/4 cup boiling water
1 8-ounce carton strawberry yogurt
1/2 cup whipping cream
1 tablespoon sugar
1/2 teaspoon vanilla extract
fresh mint leaves
extra strawberries for garnish
Recipe
Slice or dice the strawberries into a large bowl. Stir in the sugar and crush the berries. Cover and refrigerate for at least 2 hours to allow the strawberries to release their juices and the mixture to chill.
Place the gelatin in a small bowl. Pour the boiling water over and stir constantly for about 2 minutes to dissolve the gelatin. Stir the mixture into the strawberries. Cover and refrigerate for 15 minutes; then check to see if mixture is partially set, about the consistency of egg whites. If not ready, return to the refrigerator and check every 10 minutes. (Watch closely; do not allow the mixture to become completely firm.)
When the strawberry mixture is partially set, stir in the strawberry yogurt. Whip the cream until it begins to thicken slightly. Add the sugar and vanilla and whip until soft peaks form. Gently fold the cream into the strawberries. Spoon the strawberry mousse into dessert glasses or into a decorative serving bowl. Cover and refrigerate for at least 3 hours before serving.
To serve, garnish each serving with mint leaves and a strawberry. Serves 6 to 8.
