    The Best Chocolate Ice Cream

    2 cups sugar
    2/3 cup Dutch processed unsweetened cocoa powder
    ¼ cup all-purpose flour
    ¼ tsp. salt
    2 cups milk
    2 eggs, slightly beaten
    1 Tbsp. vanilla
    1 qt. half-and-half or light cream
    1 cup whipping cream

    Recipe



    In a medium saucepan combine sugar, cocoa, flour, and salt; stir in milk and eggs. Cook over medium heat, stirring constantly, until mixture just boils. Reduce heat; cook and stir 1 minute more. Remove from heat. Whisk in vanilla, half-and-half, and whipping cream. Transfer to a large bowl; cover and chill until cold.
    Freeze mixture in a 4- to 5-quart ice-cream freezer according to manufacturer’s directions. Remove blade and stir ice cream. Cover and place container in freezer for 4 hours to ripen. Makes 2 quarts.
