    3 pkg (3 oz each) pineapple flavored gelatin
    2 cups boiling water
    2 cups champagne, chilled
    1/2 cup cold water
    1 (8 ounce) can pineapple chunks, drained
    1 (11 ounce) mandarin oranges, drained
    1 cup red grapes, halved
    mixed fruit (optional garnish)
    mint sprig (optional garnish)

    Recipe



    Coat 8 (1 cup) molds or 1 (1 quart) mold with butter-flavored cooking spray.

    Combine gelatin and 2 cups boiling water, stirring constantly 2 minutes.

    Stir in champagne and 1/2 cup cold water.

    Refrigerate 30 minutes, or until mixture reaches consistency of mayonnaise.

    Fold in pineapple, oranges, and grapes.

    Pour 2/3 cup mixture into each of 8 molds or entire mixture into 1 large prepared mold.

    Chill 3 hours, or until set. Unmold.

    To serve, garnish with fresh fruit and mint sprig, if desired.
