    1 Cup cubed or ground country ham
    1/4 cup green onions, chopped
    8 tablespoons melted butter, divided
    12 eggs, beaten well
    1 can (4 oz) sliced mushrooms, drained (I would use fresh mushrooms instead)
    2 1/4 cups soft bread crumbs
    Pinch of paprika

    In a large skillet, saute ham and onion and fresh mushrooms in 4 T. of the butter until onion is clear. Add eggs, and cook over medium heat stirring to form large soft curds, not cooked all the way. Add the Cheese sauce and spoon into a greased 9 x 13 Pyrex dish. Combine the remaining 4 T. butter with the bread crumbs and paprika, sprinkle over all. Cover and chill overnight. Bakd uncovered at 350 degrees for 30 minutes or until thoroughly heated through.

    Cheese Sauce
    2 T. butter
    2 1/2 T. flour
    2 cups whole milk
    1/2 t. salt
    1/8 t. pepper
    4 oz. cheddar cheese, grated (or a tad bit more!)

    Melt butter over low heat; blend in flour and cook 1 minute. Gradually add milk; cook over medium heat until thickened, stirring constantly. Add salt, pepper, and cheese, stirring until cheese melts and mixture is smooth.
