Breakfast Eggs w/Peas and Onions

List of Ingredients
3 egg whites plus one whole egg
baby spinach
1 cup chopped onions
salt and pepper to taste
grated cheese of choice
EXTRA VIRGIN OLIVE OIL
Recipe
1. Beat eggs until fluffy and set aside.
2. Cook spinach in water until soft about 3 minutes, set aside.
3. Fry chopped onions lightly in a touch of olive oil until golden in color, set aside.
4. Heat skillet with 2 Tbsp. olive oil, pour in the eggs and let it cook like a pancake. Add the spinach and onions and add salt and pepper. Flip one side over the other to form a crescent shape. Add a little more salt and pepper and some grated cheese. Cover and cook until cheese melts. You have a healthy morning meal.
