Egg Salad Ring

List of Ingredients
8 to 12 hard cooked eggs, riced or finely chopped
1/2 to 3/4 cup mayonnaise
2 tablespoons finely chopped parsley
2 tablespoons chopped chives or finely chopped onion
1 tablespoon Dijon mustard
salt and freshly ground pepper to taste
hot sauce to taste, optional
tomato wedges and/or sliced black olives for garnish, optional
Mix all ingredients together in a mixing bowl and pack into a 7 inch ring mold. Refrigerate for at least 2 hours and unmold before serving. Garnish with tomato wedges and/or sliced olives if desired. Serves 4 to 6.
