3 jalapenos, sliced and diced
4 ounces grated cheddar cheese
4 slightly beaten eggs

Arrange peppers in a nonstick, 10 inch pie plate; cover with cheese. Pour eggs over cheese. Bake at 275F for 40 minutes or until set. Cut into 10 wedges. Serve hot.
