Eggs Olé

Butter or oil to grease pan
3 - 4 oz. cans mild green chilies
1 dozen eggs
diced onions (optional)
1 lb. Monterey Jack cheese
16 oz. sour cream
Preheat oven to 350o. Grease 9x12 baking dish, drain, wash seeds from chilies. Line dish with chilies. Slice cheese & top chilies evenly. Beat eggs, and sour cream until blended. Pour over cheese & chilies. Bake uncovered 30-40 minutes. Eggs are done when knife comes out clean.
Serves 4-6 persons.
Serve with warm rolled flour tortillas.
