    1 pound asparagus, cleaned and trimmed
    6 Tbsp. EXTRA VIRGIN OLIVE OIL
    2 tsp. salt
    black pepper
    1/4 cup grated Parmesan cheese
    12 large eggs
    1 cup ricotta cheese (cottage cheese can be substituted)

    Recipe



    1. Place asparagus on a baking sheet. Gently toss with 2 tablespoons Extra Virgin Olive Oil. Sprinkle with 1 teaspoon salt and pepper to taste. Roast in a preheated 450 degree oven for 10 minutes. Remove from oven, gently shake asparagus, and sprinkle with Parmesan cheese. Return to oven and roast until tender and browned, about 5 minutes. Remove from oven and set aside.

    2. Whisk eggs, ricotta cheese, 1 teaspoon salt and pepper to taste in a large bowl and combine well. Allow recotta lumps to remain.

    3. Place remaining 4 tablespoons of olive oil in a large non-stick skillet over low heat. Add egg mixture. Cook until desired donenoess or until puffy. Remove from heat. Arrange aparagus on a serving plate and spoon eggs on top.

    Serves 6. For fewer servings, decrease number of eggs.
