Ham & Spinach Quiche w/Roma Tomatoes

10-inch pie crust, prepared
1 oz butter or margarine
24 oz (6 cups) Mann's salad spinach, chopped and sauteed
2 tbsp vegetable oil
1 cup yellow onion, diced
1 cup ham, smoked, rough chopped (any type of ham)
2 tbsp garlic, minced
12 oz light cream
3 large eggs
1 egg yolk
1/4 tsp nutmeg
2 oz parmesan cheese, freshly grated
4 oz Roma tomatoes, sliced
Recipe
Preheat oven to 375 degrees.
Saute onions in vegetable oil until tender.
Add the smoked ham and garlic and sauté an additional 2 minutes. Remove mixture from pan.
In a bowl, beat the cream, nutmeg, eggs and cheese together and stir in Mann’s Salad Spinach and smoked ham mixture. Mix all ingredients, then pour into prepared pie crust.
Arrange the Roma tomato slices on top, dot them with butter.
Bake for 35-40 minutes until the moisture is set and slightly browned on top. Serve.
