Ham & Spinach Quiche w/Roma Tomatoes

10-inch pie crust, prepared
1 oz butter or margarine
24 oz (6 cups) Mann's salad spinach, chopped and sauteed
2 tbsp vegetable oil
1 cup yellow onion, diced
1 cup ham, smoked, rough chopped (any type of ham)
2 tbsp garlic, minced
12 oz light cream
3 large eggs
1 egg yolk
1/4 tsp nutmeg
2 oz parmesan cheese, freshly grated
4 oz Roma tomatoes, sliced
Recipe
Preheat oven to 375 degrees.
Saute onions in vegetable oil until tender.
Add the smoked ham and garlic and saut� an additional 2 minutes. Remove mixture from pan.
In a bowl, beat the cream, nutmeg, eggs and cheese together and stir in Mann�s Salad Spinach and smoked ham mixture. Mix all ingredients, then pour into prepared pie crust.
Arrange the Roma tomato slices on top, dot them with butter.
Bake for 35-40 minutes until the moisture is set and slightly browned on top. Serve.
