    Ham and Grits Crustless Ouiche

    ½ cup water
    ¼ teaspoon salt
    1/3 cup quick cooking yellow grits
    1 (12 ounces) can evaporated milk
    1½ cups chopped cooked ham
    1 cup (4 ounces) shredded sharp Cheddar cheese
    3 large eggs, lightly beaten
    1 tablespoon chopped fresh parsley
    1 teaspoon dry mustard
    1 to 2 teaspoons hot sauce

    Recipe



    Bring water and salt to a boil in a saucepan; stir in grits. Remove from heat; cover and let stand 5 minutes. (Mixture will be thick.) Stir in milk and next 6 ingredients. Pour into lightly greased quiche dish or pie plate. Bake 30 to 35 minutes. Let stand 10 minutes before served.
    Variation: Any sort of chopped meat (bacon, crab, sausage) or vegetable (broccoli, spinach) can be used.
