    6 hard cooked eggs
    8 slices bacon
    1/2 pound fresh mushrooms, sliced
    1 (10 3/4 oz) can cream of mushroom soup, undiluted
    1/2 c. mayonnaise
    1/2 c. milk
    1 (2-ounce) jar diced pimiento, drained
    1 Tbsp. chopped chives
    Paprika (optional)
    Chopped fresh parsley (optional)
    1 (3-ounce) can chow mein noodles

    Recipe



    Slice eggs in half lengthwise; place in a lightly greased 8-inch baking dish.

    Cook bacon in a large skillet until crisp; remove bacon, reserving 2 tablespoons drippings in skillet. Crumble bacon, and set aside. Saute mushrooms in drippings until tender; drain well, and spoon over eggs.

    Combine soup, mayonnaise, milk, pimiento, and chives; mix well, and spoon over mushrooms. Sprinkle with reserved bacon.

    Bake at 350F for 20 minutes. Sprinkle with paprika and parsley, if desired. Serve over chow mein noodles.
